Our Story
SushiGo exists for one reason: to serve the best sushi in town, the way it should be made. Fish bought at dawn, rice seasoned warm, and every piece shaped to order.
How It Started
SushiGo began the way good sushi always does: early. Long before the first guest sat down, there was a bicycle ride to the market in the dark, a habit of choosing only what looked right that morning, and a refusal to serve anything that had waited. That habit became a counter, and the counter became SushiGo.
We kept it deliberately small. Twelve seats means the person shaping your sushi can watch you take the first bite. It means the rice is still warm when it reaches you, and the menu can change the moment the catch does.
What has not changed is the starting point: buy the best fish available today, handle it with respect, and get out of its way.
What We Stand For

Rice is seasoned through the day and kept at body temperature. Fish is cut when you order, not before. What reaches your plate was resting a few hours ago, at most.

Sushi is at its best in the first minute of its life. Everything we serve is shaped at the counter the moment you ask for it, so the rice is still warm and the nori still crisp.
The Craft
There are only a few elements in a piece of sushi, which is exactly why each one has to be right. Our rice is cooked in small batches and dressed with a house blend of rice vinegar, sugar and salt, adjusted to the humidity of the day. Our wasabi is grated fresh from the root. Our nikiri soy is brushed on, never dipped into.
The rest is repetition. The same knife strokes, the same hand pressure, thousands of times until the piece comes out right the first time, every time. That is the whole secret of the best sushi in town: there is no secret, only care applied daily.
If you want to see it happen, sit at the counter. The pass is open and the show is the point.
The People
Behind the counter, a compact team that trains together, buys together and eats together. Everyone at SushiGo learns the rice first, because if you cannot season the rice you cannot taste the fish. Seniority at the counter is earned in months of quiet, exacting work.
In the dining room, the standard is simpler and just as strict: read the guest, keep the pace of the counter, never let a glass or a story go empty.
We are proud of the team we have built, and prouder still that most of them have been here since the early days. That continuity is in every piece we serve.
